MATC CULINARY PROGRAMS OFFER
FOOD DEMONSTRATIONS, RECIPES AND ADVICE
FEATURING FARMER'S MARKET PRODUCE

Madison Area Technical College (MATC) Culinary Trades faculty will demonstrate ways to use fresh local foods most Saturday mornings*, from 9 to 11 a.m. through August 24 at the Dane County Farmer's Market in downtown Madison on the Capitol Square. The demonstrations will take place on the South Hamilton Street side of the square, near the Inn on the Park.

Chefs John Johnson, Paul Short and Joseph Gaglio and Master Baker Punky Egan will take turns presenting recipes and advice on using produce available at the Farmer's Market. Food samples also will be available as well as information on the MATC culinary programs and classes.

In one recent session, Egan provided recipes using fresh strawberries and offered tasty samples of strawberry salsa with cinnamon chips and strawberry bars.

With an emphasis on regional American and European cuisine, students in MATC's culinary programs receive extensive hands-on instruction and experience in both classic and contemporary culinary techniques and cooking methods. Under the supervision of chef/instructors, students put their newly acquired cooking, baking and customer skills into practice in MATC's gourmet dining restaurant, catered events or retail food outlets.

Programs include Culinary Arts, Baking/Pastry Arts, Food Service Aide and Food Service Production. Under development are two new certificate programs in Coffeehouse Management and Catering Management.

The Dane County Farmer's Market is open from 6 a.m. to 2 p.m. every Saturday and runs through November. Driving and parking information is available on their website at http://64.224.162.148/dcfm/home.htm.

One of the largest of the Wisconsin Technical College System's 16 colleges, MATC provides a comprehensive curriculum of technical, liberal arts and science, adult basic education and life enrichment studies and activities, as well as customized employee training. With training in more than 100 career programs, the college awards associate degrees, vocational diplomas and certificates, and offers non-degree courses. MATC serves all or parts of 12 counties located in south-central Wisconsin and offers instruction through five campuses and other locations throughout the district.

*There will be no demo on Saturday, July 13.
