Offers New Chocolate Baking/Pastry Arts Classes
As Valentine’s
Day approaches, we are all reminded of the important connection between
love and chocolate. But, Madison Area Technical College has found that
the love of and demand for luxury chocolate has turned into such a year-round
passion that it is introducing two new baking and pastry art classes focusing
on chocolate next fall.
“The movement
is starting much like the specialty coffee trend did a few years ago,”
according to Maureen (Punky) Egan, certified master baker and MATC baking/pastry
arts program director, “Now consumers have educated coffee palates
and are driving the specialty coffee shop growth. Similarly, consumers’
experiences with luxury chocolate, plus the number of boutique chocolatiers
are increasing in larger cities. Our sophisticated tastes and love of
the sweet substance is making chocolate the newest fancy food craze.”
The new MATC classes
cover the history of chocolate, chocolate tasting and tempering, designing
with chocolate, and creating various chocolate delicacies, such as White
Chocolate Raspberry Framboise Mousse, Classic Sacher Torte, Chocolate
Truffles and Grand Marnier Gateau.
The classes expand
on and are part of the 1-year Baking/Pastry Arts Program, which is accredited
for chefs and pastry chefs by the American Culinary Federation.

MATC is the second largest of the Wisconsin Technical College Systems’
16 colleges. It provides a comprehensive curriculum of technical, liberal
arts and science, adult basic education and life enrichment studies and
activities, as well as customized employee training. MATC awards associate
degrees, vocational diplomas and certificates, and offers non-degree courses.
