MATC CULINARY STUDENTS WIN BIG
AT WISCONSIN RESTAURANT ASSOCIATION STUDENT CULINARY COMPETITION

MATC Culinary students took home Best of Show and Second Best of Show Awards and a total of 57 medals from the Wisconsin Restaurant Association (WRA) Student Culinary Competition in March. The competition included 149 students from throughout the Wisconsin Technical College System.

Sixty-one MATC students participated in the event winning 16 Gold, 23 Silver and 17 Bronze medals in addition to the Best of and Second Best of Show Awards. The next highest number of awards received by any other school was five and 120 students received awards overall.

To enter, each student was asked to create a beef-based entree, complete with side dishes. Students prepared their dishes the night before the event, coating them in an aspic glaze to keep them fresh. A panel of three award winning chefs from around the state judged the students’ finished work for presentation, creativity, palatability and originality.

“The preparation time was intense,” says Chef Joseph Gaglio, an instructor in the Culinary Arts Program. “Students started working on their entries long before the event and spent an average of 20 hours preparing. MATC has made a strong showing in the last three years but this was the first time the same college won both Best of Show and Second Best of Show.”

The Best of Show entry, he says, included Flat Iron Steak Roulade with Stuffed Chive/Dill Cream Cheese, “Lattice” of Zucchini and Carrot and Turned Potato with Herbed Demi-Glace.

The event was part of the Wisconsin Restaurant Association 70th Annual Trade Show. WRA is a nonprofit organization devoted to pursuing the best interests of restaurants across the state. More than half the restaurants in Wisconsin are members, approximately 3,000 diverse food service businesses representing over 7,000 locations.

MATC offers a two-year associate degree program in Culinary Arts as well as one-year technical diplomas in Bakery/Pastry Arts and Food Production.

MATC is one of the largest of the Wisconsin Technical College System’s 16 colleges and serves approximately 50,000 individuals annually. It provides a comprehensive curriculum of technical, liberal arts and science, adult basic education and life enrichment studies and activities, as well as customized employee training. MATC provides training in more than 100 career programs. It awards associate degrees, vocational diplomas and certificates, and offers non-degree courses. The college serves all or parts of 12 counties located in south-central Wisconsin and offers instruction through five campuses and various other locations throughout the district.
