Indonesian Chicken Sate with spicy Peanut Sauce

INGREDIENTS AMOUNTS
Wooden skewers soaked in water 10
Chicken breast, boned and skinless

1 pound

Curry Paste

½ tsp

Gingerroot fresh grated 1 tsp
Lemon juice from fresh lemon 2 tbsp
Dark soy sauce

3 tbsp

Honey 

2 tbsp

Coconut milk

½ cup

Peanut butter, creamy   1 tbsp
Crushed dried chilies to taste
Water  

½ cup

 

METHOD

  1. Cut chicken into 10 equal strips. Skewer each strip of chicken onto the wooden skewers. Cover and refrigerate.
  2. In a large sauté pan combine curry paste, gingerroot, lemon juice, soy sauce, honey, coconut milk, peanut butter and water. Bring mixture to a boil, stirring constantly.
  3. Reduce heat, and add as many chicken breast skewers to the pan that will fit without crowding. Simmer for 8 to 10 minutes, turning and basting occasionally.
  4. Remove cooked skewers from pan, and repeat step 3 with uncooked skewers.
  5. Sprinkle with dried chilies to taste. Serve warm or cold (I prefer warm).
