Char Grilled Shrimp with Texas Pit Barbecue Sauce

Yield: 10

Shrimp

INGREDIENTS AMOUNTS
Wooden skewers soaked in water 10
Shrimp U-15 peeled and deveined

Salt and Pepper

to taste

Lemon Juice

¼ cup

Chop parsley 2 tbsp

Barbeque Sauce

INGREDIENTS AMOUNTS
Ketchup 2 cups
Worcestershire ¾ cup
Apple cider vinegar

1 cup

Dark brown sugar

½ cup

Dry mustard 2 tbsp
Grated horseradish 2 tbsp
Tabasco sauce 3 tbsp
Butter

5 ounces

Ground black pepper 1 tbsp
Dark beer

1 cup

Lemon juice ¼ cup

 

METHOD

  1. Skewer each of the shrimp with the tail towards the bottom of the skewer. Season with salt and pepper, lemon juice and parsley. Cover and refrigerate skewers.
  2. Combine all of the ingredients for the Barbecue sauce and simmer for 40 minutes. Chill completely.
  3. Grill each shrimp skewer and just before completing brush with barbecue sauce and serve.
